Pumpkin Bliss Cupcakes

OH! MY GOSH! These are sooo yummy!
This recipe is from Domino magazine, but I found it online.



Pumpkin Bliss Cupcakes

3 c. flour
1 T. plus 1 t. pumpkin pie spice
2t. baking soda
1 t. salt
3 c. Sugar
1 (15 oz) can pumpkin puree
4 large eggs
1 c. vegetable oil
3/4 c. orange juice

Preheat oven to 350. Line muffin pans with liners or spray with baking spray. Sift together flour, spice, soda and salt. In large bowl, combine sugar, pumpkin and eggs. Whisk until smooth. Whisk in the oil and orange juice until smooth. Add flour mixture and fold together until incorporated. Do not overmix. Bake 20-25 minutes and frost with cream cheese frosting.

Cream cheese frosting
4 oz. unsalted butter, softened
8 oz. cream cheese, softened
1 T. vanilla
5 c. confectioner's sugar

Cream butter and cream cheese until fluffy. Add vanilla and beat. Add sugar one cup at a time and continue to beat an additional 5 minutes.

I got this recipe from Domino and I've been making these cupcakes for about two years now. They are a favorite among my friends and family. I add a little cinnamon to my frosting. I think it's pretty and it tastes great too.

Love this recipe. a huge hit always. question: it doesn't say how many it makes?

Jessica- I haven't made this recipe for about a year...I'm pretty sure the recipe makes 20-24 cupcakes.
